I wonder if some of it is just your genetic make-up though. At the barn you don't appear to have anything to clean up. That's pretty impressive if you are working at or over threshold. Maybe I'm not in the best shape or w/e but I am sweating like crazy regardless of whether I am indoor or out.
For cold weather riding, another factor is the air denser and harder to ride through at a given speed vs. warm temps. If you are trying to maintain your normal speed in cold weather (all other things being equal) you will have to work a bit harder.
